Priest Stranglers and Little Sparrows are not quite the odd bedfellows they sound. Both find common ground in the North Italian city of Trento (above), glorious gateway to the Dolomites. The Trentino has always been wrangled over by Italy and Austria; reaching its blood-stained apogee during the Great War. Witness the trenches and obsolete weaponry that still litter the mountain ridges. 

A benevolent legacy, though, is the intermingling of Germanic and Italian Alpine cuisines. That’s why you’ll find Strangolapreti (stranglers) and Spätzle (sparrows) sharing equal billing on the menus. The former, also known Strozzapreti, are usually a twisty pasta made up of just flour water and salt – but no eggs. Legend has it these were taken by the Church as tithes, leaving the peasants to fulminate against ‘priest-chokers’ or ‘priest-stranglers’ in anti-clerical hotbeds such as Emilia Romagna. Or maybe it’s just a reference to how you shape them by hand.

Up in Trento my Strangolapreti turned out to be a delicious local variant – spinach gnocchi. In truth, they weren’t a far remove from the Spätzle, noodles which do benefit from the presence of eggs. In the Swabian-German dialect the name translates as ‘little sparrows’, which they resemble in flight when shaped by a spoon in the traditional way.

From its South West German birthplace the dish has flown across all the Alpine regions, establishing itself everywhere and, most handily, is now nesting in a restaurant in Manchester, paying its own homage – The Spärrows.

Up on Red Bank chef/co-owner Franco Concli stays true to his own Trentino roots by making the Spätzle the traditional way, hand scraping them off the floury board and dropping them into simmering water. They are available both as savoury and, very apres ski, as a sweet, with cinammon, brown sugar and butter.

I like both the Spätzle and Gnocchi served simply with butter and sage (£7 for 110g), but on a recent visit chose the £9 version with guanciale (cured pork cheek), which was fabulously soothing. So too was a special of beetroot-tinctured agnoletti filled with ricotta and lemon. 

Russian style pelmeni dumplings with beef/pork garlic breadcrumbs (£8.50) were less satisfying. I should have gone for the Polish pierogi, little dumplings filled with melted cottage cheese and potato with soured cream and sauerkraut, a favourite from The Spärrows’ early days in a small archway near Manchester’s Victoria Station.

Since then the drinks list has gone from strength to strength under the stewardship of co-owner, Polish-born Kasia Hitchcock. It is as focused as the cool but cosy fit-out of a much larger arch space. A sake and spirits expert, she has been very canny with a wine list that majors in the very Alpine territory occupied by most of the food. Reds such as Lagrein, Teroldego and a Pinot Nero, are all there, from the Trentino/Alto Adige with their better known country cousin, Zweigelt from Austria. Its producer Sepp Moser also supplies the well-priced house white, a moreish Gruner Veltliner (the thinking person’s Sauvignon Blanc).

It all takes me back to Trento. I was in town for the annual Mostra dei Vini, the spring festival celebrating the wines of the Trentino region. After dark I mingled with the winemakers and was astonished at the variety of styles and local grape varieties used. Among the reds I liked the chunky Marzeminos, the more ethereal Pinot Neros and the flagship Teroldegos, with Muller-Thurgau outstanding among the whites. The delicate Nosiola, grown in a small corner of Trentino only, fared better as the base for the dessert wine Vino Santo (not Vin Santo, that’s Tuscan).

The jolly fest was held in the stunning Castello del Buonconsiglio. The original 13th century Castelvecchio (“old castle”) is in contrast to all the Renaissance add-ons in different styles erected to the glory of various Prince-Bishops who ruled here in the name of the Holy Roman Empire. Cardinal Bernardio Clesio, the greatest of these, was responsible for its vast artistic treasure house, the Palazzo Magno. I liked the earlier Gothic-Venetian loggia.

The castle also houses a grim reminder of the bloody Italian campaign during the Great War – the dungeon that housed patriot martyr Cesare Battisti before he was hanged  in the castle grounds. This was Austrian territory then and they regarded him as a traitor for fighting on the Italian side. A Battisti mausoleum tops a hill outside Trento. As I write this piece on our own Remembrance Day I’ve opened a bottle of Teroldego to salute the fallen on a front that most Britons have never heard of.

It’s a 30 mile meander across the West Flanders fields from Dranouter in Heuvelland to Dottignies in French-speaking Wallonia. You’re always just in Belgium but aware that this is border country, in the hinterland of France’s fifth largest city, Lille. On a squally Saturday afternoon up on the Pennine Moors there’s a decided gustatory ley line connecting us to both these distant municipalities.

It’s all about food rooted in the Tyke terroir but with an undertow of new wave Belgian influences forging a bond with a powerful dark beer that similarly reflects the zest of a groundbreaking generation in that country.

In the bar of the Moorcock Inn at Norland there’s a well-thumbed copy of Kobe Desramaults’ eponymous cookbook. Moorcock co-owner Alisdair Brooke-Taylor was Kobe’s right hand man at his Michelin-starred In de Wulf at Dranouter, in a region poignantly dotted with Great War cemeteries.

When In de Wulf closed in 2105 Al and his sommelier partner, Aimee Tufford, brought back to the UK – among much else – an affinity with Belgian beer. That’s why if you look beyond hand pulls dispensing Yorkshire cask ales from Timothy Taylor and Vocation you’ll find a bottled beer list of dubbels and trippels, saisons, geuzes and lambics. Even different ages of Orval, if you’re lucky.

The Brouwerij De Ranke XX is on of my go-to beers in my quest for a true bitter finish. The hop freaks of contemporary Belgian brewing Nino Bacelle and Guido Devos have been brewing this 6.2 per cent pale ale since 1996. Unfiltered, unpasteurised, using only whole hops, not pellets. The only compromise is in the address. Dottignies, site of the brewery they built in 2004, is in Wallonia but the De Ranke official HQ is a mile or two away in Flemish territory.

The XX is not on the Moorcock beer list but, to our surprise, there’s a limited edition 750ml sharing bottle of a De Ranke Back To Black, originally brewed for the 10th anniversary of another forward-thinking Belgian brewery, lambic specialists Moeder. Remarkable value at £16, it is billed as an imperial porter and it pours almost black. Brewed with seven different malts and aged in barrel for nine months, it is as complex as you’d expect, with a nose of oak (obviously), dark chocolate and figs/raisins, yet its smooth cherryish taste combines sourness and bitterness in perfect balance.

 Not quite what you’d expect but a Eureka moment. It is a quite perfect match for the Moorcock menu de jour (as they don’t say in the hills above Sowerby Bridge). When Kobe Desramault moved from farmhouse-based In de Wulf  to open Chambre Séparée in Ghent he took foraging and fire with him to an urban setting. The five-ton smokehouse and industrial-grade grill in the Moorcock car park seems a better fit here. So too, as the website proclaims, “250 acres of productive moorland, providing plenty of plants, berries, mushrooms and game”…. and an onsite organic kitchen garden.

Pick of the dishes off the blackboard were both fish-led. A mackerel tartare with preserved chestnuts and radish (£8), a combo I’ve never encountered before, tasted as distinctive as it looked – autumn on a plate, while the under-rated grey mullet becomes a star in treatment Al calls a ‘bouillabaisse’ that is a remove from the Provencal stereotype. Chunks of the line-caught fish are cooked en papillote with fennel and preserved lemon, both of which scent it marvellously. At £18 it is the second most expensive dish on a menu that usually contains only a couple of meat ‘mains’ these days. My companion is a vegetarian/pescatarian, so we veered in that direction.

The porter had a particular affinity with wood-roast kabucha (Japanese) pumpkin gnocchi (£13.50), strewn with a walnut pesto and curls of house ricotta. Not the prettiest dish and as substantial as it sounds, it felt a proper antidote to the inclemency of the weather.

Perhaps we were being greedy ordering the crispy smoked potatoes that are a Moorcock constant as well as a confit Jerusalem artichokes, wood-roast mushrooms in another intriguing marriage with laverbread and miso-pickled beans. I’m not quite sure this gelled, but then where else for miles around would you find any chef as consistently inventive. The drinks list put together by Aimee is equally special. 

Do make the trip up. On foot’s best for the sheer adventure. But definitely choose the right day! Captain Smidge (below) was the very definition of ‘wet dog’.

Old chestnuts are less an ingredient more a verbal crutch but I can forgive Fergus Henderson for dredging up his riposte to the smugness of plant-based proselytisers: “How do you tell someone is a vegan? Answer: They tell you.”

Nigella Lawson shares the great man’s charm and forthrightness. She has just ruffled a few feathers – if feathers are allowed in the equation – by admitting to a newspaper she “doesn’t see the point” in being vegan after she essayed the lifestyle choice for two weeks.

While loving vegetables and respecting the views of those who eat a plant-based diet, she won’t be giving up meat again any time soon.

In her opinion humans should eat meat as the “have the teeth for meat”, while conceding we all should cut down excessive intake. It was the eggs she missed the most during her trial run. With me it would be the cheese. Have you ever sampled vegan cheese? As unpleasant as many of the meat and fish substitutes flooding the market.

The 61-year old telly icon, whose latest book Cook Eat Repeat is her best since her debut How To Eat, said she is unsure how such a diet can be better for you due to “intensive factory-making”, preferring to eat ‘proper food’.

Proper food? If I were to pay a belated individual visit to Escape to Freight Island, self-styled “axis of incredible food, drink, music and immersive entertainment, hidden in plain sight at Manchester’s Depot Mayfield” the dining option I’d arrow in on would be Baratxuri’s wood-fired oven for a Galician Xuleton steak, grilled by the maestro Joe Botham.

No one’s going to ask him to provide the scran to celebrate World Vegan Day at Freight Island on Tuesday, November 2. That honour goes to their Depot neighbours, Mi & Pho, who will be collaborating with Pomona Island, easily the best beer choice across the venue. This fully vegan food and beer pairing will take place at the Urban Market on Tuesday, November 2 (6.30pm-10pm) and feature six fresh and healthy Vietnamese dishes paired carefully with six beers.

Expect Spring Rolls, Hot & Sour Soup, Steam Bao Bun, Pad Thai Tofu, Vietnamese Curry Tofu, and a surprise dessert to be announced on the day. Drink pairings from Pomona Island include Factotum, a pale ale; Discotheque a Go-Go, a double dry-hopped pale ale with Zappa, Mosaic, Simcoe, Vic Secret; Pomona lager; Stacks of Green Paper, a strawberry and raspberry sour with grains of paradise; and Boogie Chillen’, a double dry-hopped IPA with Citra, Idaho 7, Sorachi Ace and Galaxy. Forget Seitan, Quorn and industrial ready meals, this is the kind of food (and beer) that rocks my plant-based boat. Mi & Pho, both here and at their original South Manchester restaurant, offer fish and meat dishes but vegan is an essential component of Vietnamese cuisine… and across the rest of South East Asia. 

It’s no surprise that the latest food and drink residency at the evolving residential ‘neighbourhood’ KAMPUS, just a 10 minute walk from Freight Island, has gone to Altrincham Market favourite, Bánh Vì. Until the end of November, Thursday to Sunday, co-founders Harry Yarwood and Jess King will be serving a vegan version of Vietnam’s benchmark sandwich, the bánh mì, along with other non-meat treats from that country.

Harry? Jess? Am I hearing cries of ‘cultural appropriation’? Rubbish. The baguette that’s the basis of a bánh mì springs from French colonial heritage – further proof that food is a cultural melting pot.

Remember recently when the hateful Mail and Express drummed up a storm in a rice bowl over Manchester-born Pippa Middlehurst, winner of Britain’s Best Home Cook’, daring to write about dumplings and noodles? More sneaky woke bashing on their part. Check out my appreciation of her essential new book.

Which brings us to arguably Britain’s most influential cookery book writer, Jackie Kearney, aka the Hungry Gecko (as Pippa is Pippy Eats). The Masterchef star’s seminal first book, Vegan Street Food (Ryland Peters, £16.99), is one of the most thumbed through on my shelves. Its recipes stem from culinary adventures with her young family across Thailand, Laos, Vietnam, Malaysia, Indonesia, Sri Lanka and India. The initial plan wasn’t for a vegan-centric account. It just evolved that way thanks sheer weight of approachable meat/fish/dairy free recipes.

Only last weekend, buoyed by the presence of two South East Asian grocery stores in Hebden Bridge down the road, I recreated her Hungry Gecko Jackfruit Jungle Curry – a riot of lemongrass, galangal, turmeric root, tamarind, kaffir lime leaves and much more, served with a coconut milk-infused yellow rice. After a spring roll starter

A less complicated dish is Jackie’s Laos-style Roasted Pumpkin, Coconut and Chilli Soup,  a picture of which she has just posted on Facebook. Once of  Chorlton, she is now based in Liguria. I told you the world is a melting pot. If you are fancying a switch to a plant-based diet, or even becoming more flexitarian, start with this. Vegan doesn’t have to mean bland.

Jackie Kearney’s Laos-style Roasted Pumpkin, Coconut & Chilli Soup 

2tbsp vegetable oil; one small pumpkin nor squash, deseeded and cubed; 2-4 large red chillies, trimmed; 1 litre veg stock; 800ml coconut milk; 2tsp salt; 2-3 almond or any vegan cream.

Preheat the oven to 220C (Gas 7). Drizzle the oil onto a baking sheet. Put the pumpkin on the sheet and toss to coat in the oil. Roast for 20-30 minutes until it begins to brown and soften. Put the chillies on the baking sheet for the last 8-10 minutes and roast until they begin to blacken.

Put the stock in a large pan and add one litre of water and the roasted vegetables. Bring to the boil, then reduce to a simmer and add the coconut milk. Return to the boil, then simmer gently for 10 minutes. Using a food processor or stick blender, blend the soup until smooth and creamy. Season with salt to taste. Divide the soup into serving bowls and finish each with a swirl of almond cream.

Denver, San Diego, Portland, Seattle, Boston, and in a few one horse towns in between, the magnet of new wave American brewhouses and tap rooms has proved irresistible. So much less concentration required compared with serious winery tastings. Not that I don’t take beer seriously – but more as serious refreshment. No swirling, sniffing and spitting involved.

Sonoma County in California, with its Pinot Noirs and Chardonnays, is the laidback alternative to Napa. It’s the New World wine country of my dreams. If recent trips have involved dodging raging bush fires or coastal fog stifling the Pacific’s famous sunsets, well every paradise can slip into occasional purgatory.

But why would you name a signature beer after Sonoma, as Manchester brewers Track have? Could it be the presence in county seat Santa Rosa of Russian River Brewing Company, whose Pliny The Elder, technically a double IPA, is one of the most sought-after beers on the planet? For any geeks reading, it’s named after the Roman natural philosopher, one of the first to reference hops in his writings.

My own go-to West Coast IPA, on a less stratospheric level is Racer 5 from Bear Republic in downtown Healdsburg 15 miles north of Santa Rosa. Malty but hoppy, floral, resinous and bitter, it has always made me happy as did the original Bear Republic brewpub, now forced out of an upmarket tourist town because of running costs.

Clever Track Brewing Company in Manchester for opening their new tap room at Unit 18, Piccadilly Trading Estate, definitely not a tourist honeypot but, close to the equally revered Cloudwater at 7-8. I’ve loved their Unit 9 taproom as a cool space, but Track’s (see pictures below) has trumped it. It is quite beautiful. Seven years after launching in a Sheffield Street arch, and a succession of not quite appropriate bars, it has a home fit for its beers.

And at the recent launch Sonoma Pale Ale, as befits a beer synonymous with contemporary Manc beer culture, was available as both keg and cask. 

I prefer it as cask. All my lockdown beer dreams were of hand-pulled real ale, hopefully  through a tight sparkler. These came true when I interviewed Matthew Curtis about his Modern British Beer (CAMRA Books, £15.99). A superb range of Cloudwater beers were on the lines at Sadler’s Cat but I stuck to three pints of cask Sonoma, described by Matthew in his book as “A beer that revels in the softness of a smoother pour, while losing none of its strolling-in-a-citrus-grove character. Its gentle ABV of just 3.8% also makes it accessible.” No wonder it accounts for half of Track’s production.

Matthew was at the preview with us. Unlike Track founder Sam Dyson, who is laid up with a horrendous fracture sustained playing five-aside, and wife Mel, in the final throes of pregnancy. We toasted them royally in their absence across a beer range that is testimony to Sam’s love of hoppy American beers. And the Patel Pies residency provided the necessary ballast.

This is Kingston Black. An awkward specimen. Not the most yielding of cider apples. The tannins in the juice can be raspingly bitter. And yet aficionados seek out gnarled old trees with a grudging affection. Getting its fermentation right is a kind of Cider Holy Grail – to achieve the perfect, refreshing balance between savoury and subtly sweet.

If that sounds a mite gushing, please pardon me. I’m just gearing up for October, officially British Cider and Perry Month. Perry, cider’s pear-driven sibling, has always played second fiddle, even with its commercial moment in the sun as sparkling Babycham back in the day. Lambrini is from pears too, surely proof that class is permanent? Not.

These days both fermented apple and pear drinks are being taken more seriously by craft creators across the land. Even away from the cider heartlands of Somerset and Herefordshire. Hence I find myself in an orchard in the Borough of Trafford (though to all intents and purposes, this is Cheshire hinterland).

Dunham Press Cider covers all the bases in fermented apple (and pear) juice

All the apple trees around me at Dunham Press Cider were planted by Chris Hewitt. He’s handy with a spade. A cherished further responsibility is as parish gravedigger. The family are woven into the village fabric, working the land at Boundary Farm for close on a century. There long before the Georgian pile of Dunham Massey passed into National Trust hands.

Chris’s decision to pursue cider making was a natural progression from his dad Alan diversifying into juice pressing in the Nineties. Ironically just 20 years after the original apple trees on the farm, attached to the Dunham Massey Estate, had been grubbed up.

Chris’s constant additions to the cider apple acreage (currently up to 23), his fortitude in the face of the frost and hail of northern climes, are an act of faith and an act of love.

Sharing that love with us today, and to a wider public, is the man with the Cavalier moustache and a Messianic zeal for cider, who is cutting up a Kingston Black to show us what the pips reveal about its state of ripe readiness for picking and pressing.

This windfall of an opportunity to encounter Bristol-based Gabe Cook, aka The Ciderologist, comes with the publication of his definitive Modern British Cider (CAMRA Books, £15.99),

He’s delivering copies to Chris and his wife Alison ahead of a book launch at GRUB in Manchester, where he’ll promote the virtues of the key contemporary cider makers he chronicles in his book. Not household names like Bulmers or Kopparberg (though Weston gets a shout). Samples of ciders and perries from Nightingales, Find and Foster, Ross, Olivers and Caledonian will be testimony to the diversity of the current scene.

But first there’s the joys of a cider maker’s lunch of ham sandwiches and apple cake in the folksy Apple Barn cafe that is the public face of Dunham Press. It is totemic that alongside their own delectable range, the likes of award-winning Peterloo Perry and Dabbler Medium Sweet Sparkling Cider, sit ciders from all over the UK. There are also beer cans from another of the North West’s best artisan drinks makers, Rivington (feel my love for them via this link). The farm is also gearing up for pumpkin season with 20,000 swelling in the patch and the inner pagan in all of us will be up for their annual Wassail.

Still we’re here today specifically for the ciders, from Dunham’s organically farmed, spray-free orchards, each separate apple variety hand-picked when just ready. The names have a ripeness all of their own – Dabinett, Yarlington Mill, Hastings and curmudgeonly old Kingston Black. The pandemic has given Chris the chance to give the fermented juice more time in cask and bottle. All to their benefit. The path of minimal intervention has led Dunham into wild yeast fermentation with all its risks and rewards. 

This is a world away from the commercial brand leaders. Yet Gabe, in his book, strikes a conciliatory note about ‘Big Cider’, arguing that Strongbow and Magners can be an entry level for cider drinkers, who might later seek out artisan tipples created on a different scale. He may rail against fruit ciders made with barely any real fruit (ostensibly no better than alcopops) or ciders made from concentrated apple juice that are then heavily watered down, but he is not dogmatic about cider having to be totally from apples, and 100 per cent juice. 

‘Modern British Cider’ as a catch-all combines the innovative and collaborative with a strong sense of heritage, of back story. And we don’t mean the callow rite of passage of spewing up after a flagon of industrial White Lightning in your teens.

CAMRA is strongly supportive of real cider – campaigning for vital duty reforms and publishing Gabe’s book (via a Kickstarter campaign). But the author is quick to differentiate the drink from beer brewing, which is a cooking process. Proper cider making is more akin to winemaking, a once a year fermentation from harvested raw material, usually from the immediate terroir. “Cold climate wine” is a neat phrase coined by Gabe.

In contrast, a brewer can cherry pick his hops from around the world, brew 52 weeks a year and, in the contemporary world of craft, choose from a wide variety of global styles.

Which brings us to often under the radar perry, close to Gabe’s heart since he was born in the village of Dymock, nominally in Gloucestershire but tucked into a Herefordshire terroir that has a clutch of perfect pear orchards.

Gabe recalled in an interview: “The very first drink I ever made was 25 litres of Thorn perry, the pears from the last remaining perry tree on my granny’s farm at Dymock. Big brute of a tree that’s still there – the farm’s not actually in the family any more. And do you know what, it was actually probably the best drink I’ve ever made, which was obviously down to chance.

“And I love Thorn – I love my ciders to be bold and earthy and tannic and my perries to be lean and brisk and effervescent. Great drink. And, ah, it just … my eyes suddenly opened and I could see these trees, these orchards – it’s amazing. You have like a filter sort of taken off I suppose you could say and I could just see the impact of these trees on the landscape, it’s just amazing.”

This Damascene moment eventually led to a peripatetic career in the cider industry. His time in New Zealand had him working for both the legendary Peckham Cider and a winery, Waimea Estates. He may be self-deprecatory about his own cider making ability (one notorious attempt at perry ended up tasting of sausages) but his communication skills have led him into a variety of promotional roles within the industry, culminating in a 2017 decision to go full time freelance as ‘The Ciderologist’.

Rather than an artisan polemic, Modern British Cider is a careful summation that makes you want to sample all the delights he flags up in ‘The Most influential British Cider Makers Today’ chapter. In particular, to consider the contrasts between West Counties and East Counties, ie. made from tannic bittersweet cider apple varieties on the one hand and from fresher, fruitier dessert and culinary specimens on the other.

So what did I take home from the shelves of Dunham Press? A cider style I only discovered through the pages of Modern British Cider. Gabe describes ‘Keeved’ as “A style with a record of being produced in Britain historically, but most strongly associated with the classic cider-making culture of the Brittany and Normandy region of Northern France…. Keeved cider is made using classic, tannic-rich bittersweet cider apples to provide bold structure and intense aromas, flavours and mouthfeel. Varieties that bring some acidity and fruitiness are often classically used to provide softness and balance.

“The primary defining character of these ciders is undergoing a particular process prior to fermentation, known as keeving. This process involves the precipitation of pectin out of the juice, binding onto yeast and nutrients before rising to the surface. The subsequent yeast and nutrient deficient juice is then transferred to another vessel for fermentation. This tends to be slow and incomplete, normally leading to a lower alcohol content and retention of residual sweetness. These ciders are often presented in 750ml bottle with a degree of natural carbonation.”

I find from another source (a real lingustic windfall) that the French term for the keeving process is défécation. Merde!

Master of keeving in the UK is Martin Berkeley of Pilton Cider in Somerset. It was his Tamashanta I purchased for £9 and it was a complex, mellow, slightly smokey revelation. Keeving and initial fermentation takes place in large vats, but on Burns Night (hence the name) the young cider is transferred to Scotch whisky barrels to finish and mature.

Shepton Mallet-based Pilton was first recommended to me by Liz Paton at Drink in Hebden Bridge, West Yorkshire, my best local source of craft ciders, including the benchmark examples from the legendary Tom Oliver. A more comprehensive selection is available from Nicky Kong’s online bottle shop The Cat In The Glass, which has strong connections with Manchester Cider Club. And, of course, a day out at Dunham is de rigueur. You’ll find them at Sawpit Street, Dunham Massey, Altrincham WA14 5SJ. Buy some cider and drink it out in the orchard. What could be lovelier? You’ll also find their stalls at country fairs. Yes, the North definitely does cider.

It’s always great when some of your favourite food and drink acts get the major plaudits. The weekend buzz was all about Erst in Ancoats being praised to the skies by Observer critic Jay Rayner. Deservedly so. I last reviewed it pre-pandemic and still remember a remarkable experience.

Equally immense has been the contribution of Pollen Bakery, not far away at New Islington Marina. Check out my recent celebration of their 28 hour sourdough. The public obviously share my opinion. They voted them Artisan Food Producer of the Year in the Manchester Food and Drink Awards on Monday, held in the really rather remarkable Escape To Freight Island Ticket Hall. Fittingly Escape themselves won Pop Up/Project of the Year.

But the big winner on the night was Baratxuri, the Ramsbottom pintxos bar that also has a wood-fired outlet at Freight Island. It won Restaurant of the Year and its chef Rachel Stockley (above) Chef of the Year.

Receiving her award, she gave an impassioned speech about the role of women in the hospitality industry. To see what all the fuss is about re Baratxuri and its big sister Levanter read my glowing review from earlier this month.

In total 16 award winners were announced from food and drink establishments across Greater Manchester in this fitting climax to a resurgent Manchester Food and Drink Festival, which saw a record 80,000 visitors coming to the Festival Hub at Cathedral Gardens. 

This year it was an Awards with a difference. The shortlists were compiled by the MFDF judging panel, made up of the region’s leading food and drink critics, writers and experts (including yours truly). Amid challenging circumstances, the ‘mystery shopping’ element of the judging process was paused this year. Instead, the winners were decided entirely by the public – with food and drink fans voting in their thousands via the website. And the winners were…

Restaurant of the Year – Baratxuri, Ramsbottom

New for 2021, this award has been set up to celebrate those thriving communities and neighbourhoods in Greater Manchester that continue to build a name for themselves as a foodie destination outside the city centre.

Outstanding Achievement Award – Mital Morar (Store Group)

Recognising someone who has contributed something outstanding to the hospitality industry in Greater Manchester.

There are two commanding Bridges in Porto. The most conspicuous is the two-tier Ponte de Dom Luis I, whose metal arch dominates the skyline above the Douro river and links the city to Vila Nova de Gaia, hub of the Port wine industry. Eighty miles upstream are the precipitous vineyards that provide the grapes for the fortified classics and some equally remarkable Douro table wines.

The other Bridge is Adrian, CEO of the Fladgate Partnership, whose portfolio includes several Port houses, most notably Taylor’s, and the luxury Yeatman Hotel, all of whose 82 rooms command stunning views of Porto’s World Heritage cityscape. Big thanks to Adrian for arranging our stay there a while back. It boasts a two Michelin star restaurant, ‘library’ of 250,000 bottles, decanter-shaped infinity pool, wine spa… and Taylor’s Port lodge just across the way. Yes, there is a heaven.

But the hotel was just the start of Bridge’s ambitions to turn a workaday wine shippers warehouse district into an oenophile tourist destination to rival Bordeaux’s Cité du Vin. Some £100m later and with necessary pandemic patience after opening in 2020, the World of Wine has certainly injected a WOW! factor to the south bank of Portugal’s second city.  

It’s actually seven linked museums – like the Yeatman, created on repurposed lodge land – that add fashion, chocolate and culture to the wine-led experience which includes an exploration of cork and Bridge’s own collection of vintage and antique drinking vessels. After all of which there is the chance to unwind in one of the site’s nine restaurants with that view, naturally, of one of Europe’s most beautiful cities.

With travel restrictions easing all this is a magnet for me to return. And beyond WOW so much to enjoy all over again. As a stark contrast, roam the opposite riverfront district of Ribeira. It’s not the rough sailors’ haunt of yore, but the cobbled lanes and ancient dark houses are still far from gentrified as they might be in Lisbon. 

A cynic in me wonders if UNESCO pay a stipend to Porto’s housewives to spend half their day hanging picturesque washing out from their balconies. The flap of laundry is everywhere, high above even the narrowest, shadowiest of passages.

The quickest way up to the city proper is via the Funicular dos Guindais, which brings you out nerar the towering Se Cathedral and the medieval maze of the Barredo district. From here it’s no distance to three of the city’s star turns.

First there’s the Belle Epoque era railway station Sao Bento where azulejos tiles run rampant floor to ceiling, illustrating episodes of Portuguese history. Close by you’ll find one of the world’s most beautiful bookshops, Lello, which has a jolly little cafe on the top floor reached by ornate staircases.

Nothing, though, quite prepares you for Sao Francisco on the Rua do Infante D Henrique. The church was begun in the 1300s, but it is the 18th century Baroque interior that amazes. Over 200g of gold encrusts the high altar and pillars, culminating in the ornate carvings of the biblical Tree of Jesse. More sombrely, the opposite wall flaunts some gory images of martyrdom. The ticket includes a visit to the Catacombs that survive from a monastery on the site. Real memento mori stuff, carved skulls atop tombs and a well-stocked ossuary.

It’s a relief then to retreat to Vila Nova for an obligatory Port tasting at Calem and a stroll past the barcos rabelos bobbing on the Douro quayside. These are the traditional flat-bottomed boats once used to transport barrels of Port from the vineyards down to the city. Once it was a seriously dangerous voyage but the Douro has been tamed by locks and dams.

 

As an add-on to any stay in Porto I’d recommend a trip in the opposite direction–upstream to discover the wonderful scenery and wines of the Douro Valley. Meanwhile, here I recommend a clutch of the region’s opulent reds.

The Yeatman, Rua do Choupelo (Sta. Marinha), 4400-088 Vila Nova de Gaia, Porto.

The Douro region can hit 40 degrees in high summer, so its spectacular terraced vineyards are best suited to the production of rich, full-bodied reds. Traditionally the grapes were destined for Port, notably Touriga Nacional with its ability to withstand heat. The jury’s perennially out on whether it is rewarding a single varietal table red but, blended with the likes of Tinta Roriz (Tempranillo), Bastardo, Tinta Amarela, Touriga Franca and Tinta Barroca from the highest sites, its fruity exuberance can be channeled into real elegance.

Thee days you’ll find the Douro increasingly populated with luxury cruise vessels where you can sample such increasingly appreciated wines on board or stopping off at the various quintas (estates) dedicated to wine tourism. 

You can’t stay at the winery of Alves de Sousa, alas. Which is shame since they are spectacularly situated above the winding Douro. Te de Sousa family cultivate their five estates containing 110 hectares of vines, some over 100 years old. The winery, open to visitors is at the Quinta da Gaivosa. Visitors are welcome all year round, by appointment only (+351 254 822 111. The whole range is outstanding.

Our VIP visit culminated in a hair-raising four wheel dusk drive up 1 in 4, rutted mud tracks through pine and eucalyptus forests to the topmost vineyard, which produces their Vinho do Abandonado. Wine of the Abandoned, the first of my five recommended Douro Reds.

Alves de Sousa, Abandonado, Douro, Douro Valley, 2015 (£80)

‘Abandoned’ because it took year to recover the 85 year-old site. It was worth the effort. The 2015,  a field blend (mixed vines in one plot) is inky, spicy intense yet surprisingly refined on the palate, with liquorice and black berry dominating. At this price, it’ one for the committed Dourophile. Count me in. All prices below re rrp.

Nat’Cool Voyeur Nierpoot 2019 (£30)

Very much at the opposite end of the Douro spectrum – from the region’s most restless groundbreaker, Dirk Neeport, now dipping his toes into the natural wine sector. Six amphora reds and whites, from vines 40-50 years old, and from six varying sites each year. Each site spent 6 months in 1000L Spanish amphora, lined with beeswax, prior to blending in stainless steel, returning to amphorae for a couple of months, and then bottling with minimal sulphur added. Result is a very fresh red with soft almost silky tannins, pale because of the presence of some white grapes in the blend. It bursts with redcurrant and raspberry fruit but it’s also quite earthy. Worth chilling slightly. If you seek a more traditional Neepoort red go for Redom Tinto 2018 (£40) or the top of the range Batuta 2017 (£80), both of which were in stunning form at a recent Manchester tasting.

Quinta do Vallado Reserva Field Blend 2018 (£33.90)

The entry level Tinto is a field blend too, but I’d recommend upgrading to the Reserva, always one of my favourite Douro reds, from a beautiful estate that dates back to 1716 but has moved with the times by hosting two highly recommended boutique hotels. Their elegance is shared by this fig-scented red that unleashes oodles of cherry and plum fruit.

Quinta de la Rosa Reserve Red 2017 (£38)

This estate upholds the old Portuguese tradition of treading the grapes in granite lagares – before transferring to stainless-steel vats for fermentation. After which it is matured for 20 months in used French oak casks. Result is a medium-bodied charmer with balanced acidity and a beguiling freshness.

Quinta do Crasto Reserva Old Vines 2017 (£29.95)

Complex and concentrated with a strong herbiness, this one needs a a couple of years but its juicy cherry fruit is tempting now. Maybe one to decant. Or just choose a simpler Crasto from lower in the range.

VISITING THE DOURO

If you ever get the chance travel up the valley from Porto. If you’re driving allow yourself plenty of time. Steepling hairpin bends offer spectacular views but make taxing motoring, particularly if you get stuck behind a tractor. Boat trip, as mentioned, offer a more laidback oenophile odyssey. Then there is the spectacular 175km Linha do Douro rail service up to Pochino by the Spanish border – one of the world’s great train journeys, much of it alongside the broad, swirling river, and on Saturdays offering a steam service from Regua to Tua (www.cp.pt).

Where to stay. In sleepy Pinhão, the heart of the quality vineyard area, where I recommend Vintage House Hotel, sister hotel to The Yeatman in Porto. This fomrer Port warehouse was repurchased and renovated in 2016 by the enterprising Fladgate Partnership, who own 500, hectares of vineyards nearby. So a great base to expand your knowledge of Douro wines.

BUT WHAT ABOUT PORT, YOU ASK?

OK, but let me stray leftfield to White Port. Served chilled, it makes a delightful aperitif. I first discovered its charms while staying at Vintage House. I’ve not drunk the Porto Quevedo since but a beautiful substitute, sharing the same honeyed colour and hints of pear drop on the palate with a long dry finish is The Quinta de la Rosa White Port (£15.95). It would be deceptively easy to sink the whole 50cl bottle but beware it’s 19.5 per cent.

The best foodie guide for any visitor to Portugal, with a strong section on Oporto and the Douro, is The Wine and Food Lovers’ Guide to Portugal by Charles Metcalfe and Kathryn McWhirter (Inn House Publishing, £16.95).

In the week that Noma belatedly gained a third Michelin star after years of accolades for transforming the way we look at the food on our plate and how we source the raw materials it seems entirely of the moment to be talking low intervention wines with one of its alumni.

No, not on the Refshaleøen waterfront in Copenhagen, where chef Rene Radzepi works his culinary magic; our view is of New Islington Marina, extension of Manchester’s own hip enclave, Ancoats. Dan Craig Martin is the curator of the wine offering at Flawd, latest arrival on Marina Promenade. Originally from Oregon, Dan spent three years working at Noma.

Crucially he was previously at Blue Hill at Stone Barns restaurant in upstate New York – the farm to table crucible where the Joseph Otway/Richard Cossins project, Higher Ground, was forged. Richard was general manager at Stone Barns when fellow Brit Joe arrived as fish chef.

In 2020 Higher Ground sprang up in Manchester as a residency in the Kampus development. Here’s my Manchester Confidential review, which also unravels the partners’ CVs that include America, London, Copenhagen and Stockport.

After further peripatetic pop-ups their eyes are on a permanent restaurant site in the NOMA (the acronym is catching) district near Victoria Station, probably next year. Higher Ground has benefited from keeping their terrific team intact too – the likes of Meg and Chris.

The gang are all together at self-styled neighbourhood wine bar Flawd. Awkward name for a destination that decidedly isn’t. OK, the lack of an extractor fan means there’s no cooking on the premises. So expect assemblies of produce grown at Cinderwood, a Cheshire market garden they are partners in or platters of British cheeses and charcuterie with bread from neighbours Pollen Bakery, naturally.

Not just any charcuterie, mind. It’s sourced from Curing Rebels in Brighton, up there with the UK’s best producers of cured, fermented and smoked treats. The £12 plate on the menu for my visit featured salami, smoked sausage and coppa. So perfect to share a bottle of wine over with a view of barges and wildfowl (oh and the odd steepling apartment block in the distance).

I warmed immediately both to the wines and ciders on Flawd’s shelves, to drink in or take away, and to new partner Dan’s approach to specialising in ‘low intervention’. It’s no secret that natural wine apostles can turn into zealots, given consumer resistance. Here the choice, with affordable wines by the glass too, is much more welcoming. 

Natural wines will always be a broad church. Some wines will be a challenge to traditional, maybe hidebound palates, but there’s so much to convert you with proper advice from Dan. We share a love of less alcoholic Loire reds from Cabernet Franc and Gamay grapes. Among the most vibrant vignerons in the region is biodynamic champion Thierry Germain, marrying a modern approach to tradition (he uses both shire horses horses and specially light quad bikes in the vineyards). His Roches Neuves Saumur Champigny is £37 to drink in and at £28 to carry out. I couldn’t resist the latter.

To accompany a trio of dishes I was recommended a red from Northern Spain that combined old favourite grape Mencia with a dash of Palomino, white grape best known for sherry. Fascinating and very drinkable. 

Each of the dishes showed the value of Cinderwood. This one acre biologically intensive market garden in Poole, Cheshire, is based on the regenerative, organic principles championed by Dan Barber at Blue Hill at Stone Barns in a quest for the best possible flavours 

Under grower Michael Fitzsimmons, Cinderwood is supplying an increasing number of Manchester’s best places to eat, including 10 Tib Lane, Elnecot and The Creameries, which all share a similar ethos. Flawd, though, benefits from a daily supply chain, on which they base a swiftly changing menu.

What also cheers me is the presence of ‘signature’ ingredients that featured in that first Kampus tasting menu – the likes of smoked cod roe, Tropea onions, sea buckthorn.

Rings of Tropea, that intense red onion originally from Calabria, join an ox heart crumble in a sweet/savoury jumble on the freshest ice queen lettuce, another Italian ‘expatriate’ variety

Wafer-thin slices of courgette come dotted with Morecambe Bay shrimp in an elderflower dressing; even prettier and mouth-tingling is a dish where almost transparent discs of cucumber are coated in (the acceptable face of taramsalata) an emulsion of smoke cod roe and garnished with strips of lemony sorrel.

Most of the small dishes range in price from a fiver to £8. Seated next to the pass with Joe hard at work, the most popular dishes on the night appeared to be smoked salmon with Manchester sea buckthorn hot sauce and Lancaster Smokehouse mackerel on toast.

Of the new ventue Joe has said: “We really just want to open a neighbourhood wine bar for the growing New Islington community, to create a space for people to drink great wine, relax and have fun. Treat it as an ideal destination for an after-work drink, an aperitivo before dinner, or a few drinks before a night out in surrounding Ancoats or the Northern Quarter.”

I think it’s going to be hugely popular and I’m looking forward to a proper investigation of its bottleshop shelves. Still, it feels a product of canny expediency, a stepping stone towards a full restaurant experience Higher Ground. Now that would lift the spirits for 2022. Joseph Otway cooking on gas again!

Blue Hill at Stone Barns 

This is the (literally) groundbreaking project of farm to table guru/chef Dan Barber. With a messianic zeal, his book The Third Plate: Field Notes for the Future of Food (Abacus) champions organic flavour-driven produce as a meal focus. Shift to fewer slabs of protein, elevate the finest quality veg and grains to centre stage, respect the earth is the message. Natural Wine primers

I’d suggest two books by Alice Fiering – Natural Wine for the People (Ten Speed Press) and The Dirty Guide To Wine (Countryman Press), the latter in conjunction with Pascaline Lepetiere. Less terroir hardcore and covering organic and biodynamic producers is Wine Revolution (Jacqui Small) by Jane Anson.

Time was there used to be a new brewery opening every month in Manchester with cosy taprooms hard on their heels. That torrent of craft has slowed to a trickle with the emphasis now on established operations upsizing to bigger premises. Track are shifting up to Piccadilly Trading Estate opposite Cloudwater while both Beatnikz Republic and Blackjack have expanded into neighbouring arches.

Bucking the trend (though it has, appropriately, had the gestation period of an Indian elephant), is the Bundobust Brewery, which is opening from 4pm on Thursday, September 16, offering the group’s full repertoire of Gujarati street snacks and craft beer, much of it their own, created on the premises. So the kind of major, major opening we’ve been starved of. And it’s dog-friendly. Our chihuahua Captain Smidge (below left) approved even though spicy veggie is not quite his thing.

It’s located in the Grade II-listed St James Building on Oxford Street, a swift stagger from Oxford Road Station or the St Peter’s Square Metrolink stop.

The last time I was on site was February 12, 2020 and we all know what inhibiting factor for hospitality happened shortly after. Kitted out in a hard hat, I quickly recognised why Bundobust co-founders Marko Husak and Mayur Patel had fallen for the former car park with its wealth of period features – vintage alarm bells, glazed bricks and ‘Drive Slowly’ signage – plus a show-stopping giant glass atrium mirroring the Piccadilly Bundobust’s glass apex. 

This is all on a much bigger scale, influenced by US brewpubs and with a focus on sustainable furniture. Each chair is made from 40 recycled plastic water bottles, while school desks have been repurposed into beer hall-style tables, complete with “I Woz ‘Ere” etchings across a 150-seat taproom and restaurant. All  within a fully-functioning brewery that gleams with all the allure of a new toy. A toy that’s in the hands of a very experienced head brewer.

Dan Hocking, former main man at Holland’s world-renowned Uiltje Brewery, has spent the past year perfecting recipes behind closed doors in the state-of-the-art facility.

Bundobust’s brand new Vienna-style Lager, Cartway Lager, will be available exclusively at the brewery upon opening, taking its name from the historic ‘Cartway’ space within the St James Building that the brewery occupies. Hocking says: “Vienna Lager has a fantastic balance of sweetness and bitterness, and it’s the best all-rounder beer style to pair with food”.

On the opening day the first 200 pints are being given away, with the purchase of food and we expect lager demand will make it Goodnight Vienna.

Marko tells me: “We were due to open in May 2020. The past 18 months have slowed us down, but the delay has meant that we’ve been able to develop our beer recipes. Expect the familiar Bundobust vibe and menu, with the bonus of being in a working brewery”.

That 10-hectolitre custom-build is capable of producing 20,000 pints per month. The beer range will only be available, on rotation, at the Brewery and at the other Bundobust venues in Manchester, Liverpool and Leeds. They are designed to partner the award-winning food.

CHAITRO. 5% Nitro Chai Porter. Smooth and creamy Porter with roast malts, a whack of our Bundobust chai masala, and fresh ginger.

PEELA. 4% Pale Ale. Easy drinking hazy Pale, brewed with Azacca and Ekuanot hops. Loads of tropical fruit flavour.

DHANIA PILSNER. 4.8% Coriander Lager. Clean and crisp Czech-style Pilsner with a hit of citrusy toasted coriander seeds.

KIPSY BHAI. 4.8% Kellerbier. Traditional Kellerbier-style lager with German malts and hops. Clean, balanced and crisp.

EAST IS EAST. 6.5% New England IPA. New England-style IPA showcasing ever-changing combinations of the freshest hops.

WEST IS WEST. 6.5% West Coast IPA. Dank and bitter IPA. Piney and resinous, brewed with a rotating selection of the choicest hops. An absolute stand-out.

Bundobust Brewery will also be collaborating with the cream of UK brewery talent. Recent collaborations include Andhera Hoppy Black Lager with Deya Brewing Company, New Delhi Dazzler India Pale Wit with Northern Monk, and Salted Lemon Sour with North Brewing Co.

On a personal note, I have a small role in the Bundobust Odyssey. I was an early reviewer, for Shortlist magazine, of Marko’s pioneering Sparrow Bier Cafe in Bradford, ensuring it made the Top 10 UK craft beer bars, and as a customer wolfed my share of dosas, choles and chaats at Prasad, the Patel family’s acclaimed restaurant, now in Drighlington. In 2014 the two friends combined beer and veggie small plates to create the first Bundobust in Leeds (yes, Zelig-like I was there). The Brewery is just the latest chapter in a delicious indie story.
