When I look back on years of reviewing there’s a special roster of restaurants where I got there first. And reassuringly where I raved others followed. No delusions. Places really prospered after my initial sounding was endorsed by fellow critics with a much higher profile. Which brings me to The White Swan at Fence. A slightly slower burner after I awarded it 16/20 back in 2015, the food eulogy undermined by the basic village pub in transition ambience. Neither food nor pub enhanced by a wrong setting on my Canon Power Shot G15. Fuzzy! Shamefacedly, my incognito cover blown, I had to ask chef Tom Parker, at peak Saturday service time, if I could re-shoot certain dishes on the pass. 

Tom was the reason I’d hurtled up the A6068 Padiham bypass to the strung-out commuter hamlet of Fence. A real talent setting up in the most unlikely of places – the only Timothy Taylor tied house in Lancashire. Formerly dubbed ‘The Mucky Duck’.

My chef friend, Mike Jennings (Grenache at Walkden/later WOOD), had rung me to recommend his former Northcote oppo, who started there at 16, five years later winning UK Young Chef of the Year.

Northcote has held a Michelin star for over a quarter of a century; the Swan gained its own in 2018, three years after my first visit, and has kept it since. The award was a surprise to those fixated on more gussied up establishments but, of course, the consistent brilliance of the food counted most. 

That revered status has been confirmed this week by the resurgent Good Food Guide, now a purely digital operation, yet retaining its authority. Strong on expert reader recommendations, it rates UK restaurants across four categories, Good, Very Good, Exceptional and World Class. Only three form the latter pantheon – L’Enclume, Ynyshir and Moor Hall, with all of which I am very familiar. 34 further places make the Exceptional list, including The White Swan at Fence

According to The GFG: “Exceptional equals cooking that has reached the pinnacle of achievement, making it a highly memorable experience for the diner. The whole restaurant will be operating at the highest level: not only perfect dishes, showing faultless technique at every service, but also superb service, a high level of comfort, and a warm, welcoming atmosphere. These are the best places to eat in the country.”

Great company for the White Swan. That elite bunch includes the likes of A. Wong, Claude Bosi at Bibendum, Hjem, Inver. Outlaw’s Nest, Restaurant Gordon Ramsay, Restaurant Story, The Raby Hunt and The Sportsman.

It all leaves me feeling in the right place at the right time again. Read my review of Yynshir where, between booking and staying, it won its second Michelin star and was named the UK’s number one restaurant.

Cue last Saturday, when I booked a Swan lunch for myself and Captain Smidge, the gourmet chihuahua, en route checking the photo settings on my iPhone 13 were spot on. The five course lunch is £55 a head on Saturdays, compared with £45 Tuesday-Friday. Each prix fixe will rise by a tenner from December 1 (for obvious economic logistical reasons). Our standard set dinner will increase to £80 per head Tuesday to Saturday.

At my table opposite the Landlord and Boltmaker cask pumps Gareth Ostick (co-owner with his wife Laura and Tom) tells me that the decision to discard the several-choice a la carte post lockdowns has been a success beyond the obvious cutting down of possible food waste. It has also re-energised chef Tom, giving him the opportunity to roll with what’s fresh on the market. And, of course, in any Michelin destination, added surprises are quintessential.

Here the amuse bouches cluster across the table (no tablecloths and, all you old school Michelin tickers, don’t count on cloches). A tomato consommé topped with intense whipped basil and smoked bacon speckles comes in a prawn cocktail style goblet. With a large pebble of sourdough there’s a choice of butter, Leagram’s organic sheep’s curd, or their signature black pea hummus, which is as ‘Lanky umami’ as ever. Oh, nearly forgot a game liver parfait ‘tart’ coated in hazelnut. I’m driving, so my aim is to make my pint of Taylor’s last but already the glass is half empty, half full. Such a shame, though, not to explore the wine list, these days supplied by the excellent Miles Corish and a vast improvement on that 2015 selection.

Bread aside, Captain Smidge has to wait to the third course of herb-fed chicken to be rewarded with his tythe. It comes with hen of the woods and an old school yet light mushroom sauce with madeira and thyme. It cries out for a creamy Chardonnay, but I stay firm.

Before the fowl there is a cute little Burford Brown egg yolk, under fried potato discs dressed with herring roe and dill, giving it a Scandi brunch feel. Then, more excitingly, in  a red prawn curry foam a substantial Skye scallop topped with its own coral in the lightest of tempura batters. Masterful.

Honey truffle, mascarpone, pears and verjus is a playful palate cleanser before this accomplished kitchen unveils a triumph of soufflé technique, using Valrhona chocolate. With it a darker hot chocolate sauce and a stem ginger ice cream. All as pretty as a picture in my photos. Mostly.

It’s one helluva road trip from Austin, Texas to Cragg Vale, West Yorkshire. Eventually you turn right off the B6138 (England’s largest continuous gradient that once tested the calves of Tour de France competitors) and plunge into a wooded hollow, home to the Hinchliffe Arms.

It’s as sturdy a Pennine hostelry as you’ll find and it’s about to be revived under arguably Manchester’s premier ‘pub custodian’. Well, landlady sounds a bit Bet Lynch. Esther Maylor is not giving up her controlling interest in The Eagle Salford, which she has run for a decade from the age of 25. But from the end of May she’ll be at the helm of the Hinchliffe. Big boots to fill here with the reign of one Robert Owen Brown still a recent association. Even allowing for pandemic pressures, it’s not felt the same since he relinquished the stewardship.

So how does Austin gatecrash the narrative? In March Esther was performing with her Manc band Heavy Salad at the influential South by South West Festival in the Texan capital of cool. A multi-talented musician in her own right, the Lincolnshire vicar’s daughter is currently part of Salad’s girl backing trio. Music played a part in levering Esther into the hospitality industry. She was in a band called Biederbeck with Johnny Booth, who along with actor Rupert Hill had a business turning around run-down pubs. She begged a bar job at his debut project, The Castle in the Northern Quarter, out of which arose The Eagle opening. That was a collab with brewers Joseph Holt, which entailed adding on an intimate music venue to the once grim backstreet boozer.

All a far cry from the rural idyll of Cragg Vale, but there is a certain symbiosis. The Hinchliffe’s own new lease of life sprang from another Manchester brewery, JW Lees. Taking it over, they gave it an extensive and sympathetic renovation befitting its location.

That’s where Robert Owen Brown enters the picture in the summer of 2017. I was excited to have Rob and his ‘nose to tail eating’ ethos on my Calder Valley doorstep. 

After all, when he was cooking at The Mark Addy (a cobble’s throw, almost, from The Eagle) I had worked with him on his cookbook, Crispy Squirrel and Vimto Trifle. I welcomed him to Yorkshire by quoting from the book’s blurb: “Robert Owen Brown is the real thing… a chef who combines oceans of technique with an instinct to feed and a deep understanding of gutsy cooking – the verdict of Observer food critic Jay Rayner, for whom Rob is a panellist on his BBC Radio 4 show, The Kitchen Cabinet.

“Radio air time, mind, doesn’t put bums on seats. And Cragg Vale is hardly Maida Vale. Just regard it as a scenic  adventure getting there. Which is surprisingly easy from Manchester, especially if after the M62 you go the A58 wild moorland route. Alternatively, get off the Halifax train at Mytholmroyd and grab a cab. You’ll end up inching down an incline into a ludicrously picturesque wooded dell with a church and gurgling stream.”

I’d suggest following those trusted travel instructions to check out what Esther Maylor brings to the table. 

Be warned there won’t be an immediate food offering when the new era kicks off at the end of May. That’s for a future full of potential surprises. Just a full drinks menu (note to Lees – a couple of guest beers would be a plus) and the kind of warm welcome that’s big in Salford… and Texas.

Blog post “The Engineers is as unpretentious as lard and as solid as a bag of bricks” tickled me, even if this particular unsung chronicler of derelict boozers was not quite accurate about a four-square stone edifice in the middle of Sowerby Bridge.

Yet another local, its name referencing the industry which provided its customer core, left abandoned. I’m not going to insert the devastating stats of culled hostelries in recent decades. Too late to get lachrymose; the world has moved on. Yet it’s always heartening to see a pub building rescued imaginatively.

Step forward Engine Social Dining, home to a 30-strong menu of globally inspired small plates. I was the first critic to review it back in October 2018 and lauded the kind of slick all-day operation in a stripped down setting rarely found outside cities’ hipper quarters. Hospitality has been under siege for much of the time since. Engine was thankfully still there. Would it still convince? Let’s do the locomotion…

I suspect virgin olive oil gets the nod over lard in Mark Kemp’s open plan kitchen, complete with wood burning oven, just as it did when he worked up the A58 at Ripponden for Simon Shaw’s original El Gato Negro. The quiet Ulsterman rose through the ranks to be Shaw’s right hand man. Now he’s very much his own man. With a tight-knit team.

As El Gato shifted into Manchester, Kemp became head chef at Ricci’s in Halifax, where Wil Akroyd was manager. The pair hatched the Engine project, using their own money. Famously they had just  £30 left in the bank when they opened. 

Ricci’s, as the name suggests, leans heavily towards Italy; their own place ranges much more widely. Global influences must be in the air in Sowerby Bridge. Near neighbours on Wharf Street Gimbals has generated eclectic and exotic menus for decades. Post pandemic, this Good Food Guide stalwart is now just doing weekend takeaway meals of its ‘greatest hits’. Highly recommended.

Engine has its own recognition now, in the Michelin Guide, belying the stuffy image that can accompany such a mention. Repeat regulars are what sustain a small town operation and we were glad we arrived early one Wednesday lunchtime as a walk-in. Within half an hour virtually every table was taken. Which had taken aback Wil, who was the lone server.

The space is at it coolest after dark, when moody lighting picks out the turquoise and petrol blue upholstery. For food image daylight is infinitely preferable, I hope my iphone does justice to the parade of small plates, in order and served at decent intervals: cauliflower and Manchego croquetas (£5), red curry cod fritters (£6.50), gyozas (£6), Korean spring rolls (£6), belly pork tacos of the day (£8.50), parmesan chips (£5.50), Far Barsey beef fillet (£13), Moroccan pulled lamb (£10).

The pick of a uniformly excellent bunch? The lamb, an old favourite, the spicing spot on and the accompanying man’eesh flatbread, sprinkled with za’tar an advertisement for that wood-fired oven. New to me, the Korean spring rolls were stunning – cylinders of crisp wrapper filled with lemongrass chicken and doused in a ginger sauce. Equally stunning the unusual gyozas. Filled with sobrassada, basil and chilli, they are served with a makhani (butter chicken) sauce. It’s a fusion that ought not to work but yet again it does.

Finally, a requiem for Halifax farm shop Far Barsey, which has shut its doors. Its name will live on in Engine’s Far Barsey beef. They may no longer be the suppliers but the fillet, roasted pink, is splendid. With its pink fir apple potatoes and wild mushrooms in a pink peppercorn jus it’s as close to a Brexit-fenced True Brit dish you’ll find on this menu. The rest is a celebration of cultural diversity and all the better for it.

Those Facebook memories to share that pop up are a relentless reminder of time passing. Was it really 11 years ago I laid out an unplucked pheasant alongside a seasonal red cabbage on our garden table to pictorially celebrate my personal ‘Game for a Laugh’? (that cultural reference dates me instantly) during Manchester Food and Drink Festival.

En route to co-host a ‘Wine Tour of Spain’ event at Manchester’s People’s History Museum with Jane Dowler of Evuna, I bumped into legendary chef Robert Owen Brown, with whom I later collaborated on the cookbook, Crispy Squirrel and Vimto Trifle (Manchester Books, £15.99).

He tempted me into Mulligans off Bridge Street for a couple of palate-refreshing stouts. Drink taken, Rob offered me the pick of a swag bag full of feathered game. I still have the Barbour jacket, twice re-waxed, I was wearing that day, but never since have I stuffed a brace of partridges into the big inside pockets.

Later at the PHM, as I introduced a dense, dark Monastrell from La Mancha as the perfect accompaniment to game, notably Spain’s native red-legged partridge, I drew out my feathered props gunslinger-like to the consternation and then amusement of the front row. 

Our chihuahua, Captain Smidge, is partial to partridge. And since The Edinburgh Castle in Ancoats is dog-friendly he accompanied me to its monthly ‘Trust The Chef’ blind tastingdinner, the first since it was crowned Pub of the Year at the 2021 Manchester Food and Drink Awards. The theme was game, so there was every chance of the Smidge (and my) fave. As it turned out we enjoyed a trio of gamey treats – venison, woodcock and partridge (oops, I never asked what colour its legs had been).

‘Trust The Chef’ had already turned all autumnal for its September five-courser, taking advantage of head chef Iain Thomas’ personal veg harvest from his plot at The Hattersley Projects in Tameside.

Iain’s impressive track record includes stints at Establishment in Manchester (where Rosso now is), at Paul Kitching’s Michelin-starred 21212 in Edinburgh and alongside Davey Aspin, one of the iconic chef names in Scotland. 

So a red deer starter from Pitscandly Farm outside Forfar promised to be an object lesson in sourcing and so it proved. Prepared as as a tartare, it was simply glorious with beetroot done three ways – roasted, puréed and in a sorbet. To follow, a rich game ‘tea’ hosted a mallard breast. The tea, product of some serious reduction, was a savoury treat to the last spoonful; the mallard had a fine gamey flavour but was sinewy, as wild duck can be, and Smidge had to help out. Alongside, a rillette of mallard joined duck liver pate in a smart take on a club sandwich. Dunked in the tea, the brioche butty disintegrated delightfully.

Our gourmet hound was decidedly keen on the partridge, highlight of the five courses. A touch tricksy with its bread sauce espuma and two red onion skin cradles for a borlotti bean leg meat ‘cassoulet’, but the star of the composition was tender 

à point partridge breast. There were wine matches available for each course but we ordered (inevitably) a big Spanish red recommended by our server. The Ritme Priorat from Southern Catalonia, a well structured blend of Garnacha and Carignan, coped admirably with each game dish and the cheese course, moist and nutty Pitchfork Cheddar, accompanied by a chutney made with Iain’s own Hattersley tomatoes. Smidge confined himself to nibbling crumbs of oatcake, which summed up a copacetic, dog-friendly evening at The Castle.

The pudding course homage to Snickers, a 60 per cent chocolate parfait with candied peanuts, was deemed too rich for the little fellow. I suspect it features more regularly given chef Iain’s commitment to sustainable chocolate, supporting local bean providers in Colombia.

The regular menu gives a bid nod to Scottish produce. Good also to see a game terrine there, featuring venison, foie gras and, splendidly, grouse. The departure of my compadre Owen Brown seven years ago left a grouse-shaped hole in Manchester (the classic Rob picture below is by Joby Catto). The city scene moves on, but in Iain Thomas the Edinburgh Castle may have found its own talented ‘game changer’.

Summer 2021 marks two milestones in the post-industrial bubble that is Kelham Island. Cutting edge restaurant Jöro has expanded beyond its upcycled shipping container base to open a four-room boutique hotel nearby, complete with chef’s table, while the homely pub at the heart of this buzzing urban community is celebrating 40 years of just being The Fat Cat.

A maverick umbilical cord links that almost bucolic cask beer mecca, whose in-house brewery spawned the iconic Pale Rider ale, to the sleek steel (well it is Sheffield) Krynkl complex where chef Luke French has transformed the city’s culinary expectations over the past four years. It reached No.34 in the Estrella Damm National Restaurant Awards (announced on August 16).

Post lockdown it seemed a good time to visit both pioneering venues. So a tram from the station (after a Thornbridge Jaipur refresher, naturally at the Sheffield Tap on Platform 1B), then across the busy Shalesmoor roundabout to a suddenly hushed warren of backstreets to establish the respective locations.

Only disappointment of a dazzling day, the Kelham Island Tavern had been forced to shut

A detour might have been in order, too, to the Kelham Island Tavern, arguably the city’s best craft beer pub venue but – sign of the times – there was a Covid-closure note on the door. Still the pre-amble ramble did allow me to soak in the atmosphere of a district that defines industrial heritage and cool renewal…

Renewal, of course, means creatives clustering in shiny new build apartments or brick-heavy warehouse conversions with a casual bar/dining scene springing up to service the influx. And occasionally big hitters show up such as Mana in Ancoats, Brat in Shoreditch or Casamia on the Bristol waterfront. Sheffield has its own contender…

JÖRO

One slight tremor as I entered the penumbral interior, the normal 50 covers reduced as a Covd-safe measure. Would the widening horizons of Luke French and his wife and business director, Stacey Sherwood-French impact on the core operation? Not jut th hotel project but also street food spin-offs. Fear not this was an outstanding £65 eight course lunch that ate up three joyful hours. I’m not sure I’m a fan of the building, shaped from 29 shipping containers but I am of a serving staff that included one who had a sake qualification (thanks for the New Mountain Junmai recommendation) and another who knew his way round the new Spanish wine frontiers of Ribeira Sacra and Sierra de Gredos.

Chef Luke has previously expressed his desire to “find something similar to L’Enclume or The Black Swan at Oldstead, somewhere rural we can forage in and with a smallholding to grow our own ingredients.” For the moment he’s as urban as it gets, albeit with some amazing rural suppliers. Just a Michelin Bib for the moment but the food I encountered across my tasting menu surely deserve a star. Manchester’s own Mana deserves a second, but that’s a whole other matter.

Jöro Highlights? Virtually everything, from an early introduction to Chawanmushi, a savoury Japanese custard here flavoured with smoked eel, a tiny tranche of which also featured alongside salmon roe and pancetta. Wortley wagyu rump in a tartare with celeriac and mustard was less groundbreaking but equally wonderful. I should have asked about the Wortley provenance (it’s the fabled beef of Japan but reared in South Yorkshire’s grasslands); I didn’t make the same mistake with Doncaster peas. “You’ll taste them and know why,” was the enigmatic response. Their yoking with mint and lamb fat yielded more detailed exegesis. The key to the dish was ‘lamb garum’ where lamb mince and koji had been given 10 weeks in a water bath to create a fermented base for this incredible dish. For more on garum read my recent article.

What I really loved about the whole experience was a straightforward punch of flavours, whether a pure tranche of Cornish cod on a bed of smoked haddock and creme fraiche sauce or among the desserts the stand-out strawberries with lemon verbena and organic yoghurt. You get the dedication to our own raw materials filtered through an appropriated  Japanese and Norse (hence the name) sensibility.

THE FAT CAT

Neither of my two destinations is on the island proper, man-made in the 13th by diverting water from the River Don to power medieval mills. So a distant seed sown for the Industrial Revolution proper, the catalyst for which in Sheffield was the opening of John Crowley’s Iron Foundry in 1829, tapping into river power abundant coal and iron ore. 

If you want to get the full story visit the Kelham Island Museum, which was created 40 years ago. You can see it prize exhibition for free because the only Bessemer steel converter still in existence stands in front. This egg-shaped black hulk quickly revolutionised 19th century steel production.

Thirsty work, the industry in its heyday and pubs like The Alma just down the street of that name existed to slake those forge-driven thirsts. Then came the long slow decline of the Steel City. From the Seventies onwards recession and dereliction battered Kelham.

It took a brave man to acquire the Alma, change its name to the ironic Fat Cat and start brewing his own exceptional beer in the yard. 

That was the grand plan of Dave Wickett, the new co-owner. The pub introduced Sheffield to a cavalcade of guest beers and by 1990 when Dave took sole control he created his own Kelha Island Brewery in the beer garden. The pub survived flooding in 2007; the level is charted on the exterior alongside that of the The Great Sheffield Flood of 1864. It survived Dave’s early death and is still brewing in premises across the street.

In 2004 their flagship beer Pale Rider was voted Supreme Champion Beer of Britain at The Great British Beer Festival. It has hardly been off the hand pull ever since, though a recent month’s hiatus perturbed devotees.

Matthew Curtis, in his highly recommended new survey, Modern British Beer (CAMRA Books, £15.99) descrIbes Pale Rider thus: “There was some malt character in the flavour, soft and candy-floss sweet, but only fleetingly. This allowed a crescendo of hop to build with notes of candied orange peel to the fore, but they were restrained throughout with a balanced bittersweet finish forming at the end of this orchestral flourish. 

A touch flowery but a good summary of my ‘aperitif’ experience before lunch over at Jöro. Old meets new in one memorable Kelham Island afternoon.

Exciting openings have not been plentiful of late. Now we have one. Such is the allure of the re-born Black Friar, reopening on Tuesday, July 27, not even the stormy weather heading our way can zap the al fresco vibe generated by its glorious garden. The short hot summer was at its peak when we got our sneak preview. The rest of the world will inevitably follow.

Hurtling along Trinity Way, you’d be hard pressed to twig the large terrace behind its palisade; ditto the glass-fronted restaurant annexe seamlessly attached to the Victorian sandstone and brick pub, restored to the tune of £1.4m.

Black Friar – Salford heritage among the new build

For two decades, after a devastating fire, it stood desolate on the corner with Blackfriars Street. Not quite an eyesore – if you were a fan of Boddingtons Bitter. As the reputation of the ‘Cream of Manchester’ turned sour under successive corporate owners the prominent two bees logo decked out in yellow and black on the end of the building was a lachrymose reminder of the straw-coloured, fragrantly hoppy nectar the beer once was. 

This may be apocryphal but I’m told Boddies cask was so popular in the Seventies the Black Friar stocked no keg beer or lager. That was an old school Salford boozer; in its latest incarnation it reflects a new apartment block generation colonising the former industrial wasteland. Food-oriented, most definitely. Developers Salboy originally intended it to be a vehicle for star chef Aiden Byrne, but he pulled out as the pandemic struck; in his place is another ex-20 Stories talent, Ben Chaplin.

Still it plugs its pub credentials, honouring the brewery that once belched malt fumes over Strangeways by offering the keg Boddies at £4.50 a pint. A bland brand, it’s brewed by Inbev in Samlesbury; I’d veer towards the excellent wine list instead. 

The trad pub sign also name checks Boddingtons. It features a jolly friar, given a shaggy dog back story on the website (and a chance to proclaim the pub’s Resurrection, thankfully without appropriating the Stone Roses). 

I’d hoped the fashion for this kind of naff narrative self-validation had passed, but hey it’s just a quibble. Let us praise. The Black Friar is a holy exceptional addition to the Manchester/Salford food and drink scene. The first Salford gastropub proper since the demise of Robert Owen Brown’s remarkable Mark Addy.

What immediately impressed on that embryonic lunchtime visit was the quality of service  mustered from a young crew by exuberant Lebanese general manager Remi Khodr. From the immediate water bowl for our chihuahua, Captain Smidge, to the limoncello proffered when our puddings were slightly delayed the experience was a delight.

Probably because Smidge was with us we were seated at a garden table. No hardship but the restaurant proper looked the stylish business. An open kitchen, an abundance of greenery, black and white tiles, marble table tops, all filled with light. 

.A section of the garden – Boddingtons Corner – can be hired for private events, as can the panelled, drawing room-like Sanctuary on the pub’s first floor.

As many original features as possible have been retained but alas the shell was vandalised during the lost years. Compare and contrast its namesake in London, the Blackfriar, a masterpiece of art nouveau don by the Thames, built on the site of a real priory. It did serve Boddingtons in its heyday; food has never been a priority.

Under head chef Chaplin it definitely is here. There is to be an upmarket ‘pub food’ menu but we got to sample the ‘restaurant’ offering. Eventually there’ll be a chef’s table on the Black Friar’s second floor. You can see the ambition in what’s on offer already. I have never encountered such an elaborate, deconstructed tiramisu. No wonder it took time to emerge. A honeycomb and gold leaf wow. Equally satisfying was a 72 per cent Valrhona chocolate fondant with peanut butter ice cream across the table.

A starter of juniper-cured ‘au point’ Creedy carver duck was stunning, served with sweet roast cherries and a pickled kohlrabi salad. My Cornish boudin, in contrast struck a drab note, despite the best efforts of basil jelly and some interesting smoked dehydrated watermelon. Little roundels of seafood sausage betrayed hardly a hint of crab.

Main prices are heading premium-wards. £28 for roast Cumbrian rack of lamb, but all the Mediterranean elements of the dish were in harmony – glazed baby aubergine, kalamata olive and confit tomato jus. Smidge loved his substantial tithe.

Perhaps there was too much going on in our other main, a couple of quid more. Wallowing in a polite ‘bouillabaisse’ with a scattering of mussels was a dense seared monkfish fillet. Giving it a flouncy 20 Stories feel was a small flotilla of nasturtium leaves. A mound of squid ink rouille was excessive and would have been unbalancing if I hadn’t shoved half to the side. No matter, this is food worth making the trek for. 

Would I treat it as a pub to drop in for a pint? Doubt it. That’s what The Eagle around the corner is for. And yet… that garden. That first kiss of ‘freedom’. I know how Adam felt. Before the Fall, that eternal lockdown.

Spring 2018 and I’m besotted. The venue a rough and ready moorland pub high above Sowerby Bridge. Not an obvious honeytrap for a tryst and there was precious little flesh on the bones of the object of my desire. A deep-fried herring skeleton on the debut menu was a mission statement for the reinvention of the Moorcock Inn at Norland.

Penning the first UK review of Alisdair Brooke-Taylor’s daring fresh take on the UK gastropub I wrote: “North Sea herring season is upon us. All those Dutch and Flemish trenchermen salivating at the prospect of fatty raw fish soused in vinegar or brine. A Yorkshireman’s penchant for pickles stops at onions; herring bone to him is tweed or twill.”

Not real bones, constituting the second course in a £35 tasting menu. One that started weird and became ever more wonderful. They resembled a seahorse or a fossil shape in ammonite. Three winters (and herring seasons) have passed and this take on a Japanese omakase snack has never reappeared.

Mangalitza chop and wild greens – so very Moorcock

The rare breed Hungarian Mangalitza pork that provided the 11 week dry-aged chops that followed has remained on the radar, though. It contributes to the house-cured charcuterie sharing board that is a star attraction in the post-lockdown food offering. Some component have been two years in the making.

It is made up of pork rillettes, hot smoked rare breed ham, Gloucester Old Spot coppa, chicken liver parfait, jellied pork terrine, smoked prunes and toast. All for just £18 a platter. Inevitably you add on a £4.50 portion of their own wholemeal sourdough and cultured butter – like the extensive employment of a huge wood-fired barbecue, a constant since day one (main image).

Pandemic caution means that tasting menus are shelved for the moment; attention focuses on the daily shifting boards that constitute the bar menu.

There is a walk-in capacity, mind, as Alisdair and drinks-savvy partner Aimee Tufford continue to encourage the pubby (and dog-friendly) side of their now acclaimed foodie destination. I celebrated a recent birthday there with a pint of cask Vocation Bread and Butter Ale from fellow local heroes Vocation and then drank a series of Belgian beers, culminating in an old favourite, Westmalle Tripel (in the proper glass).

Alongside natural wines, the couple are devotees of Belgium’s astonishing beer culture after cutting their culinary teeth at the Michelin-starred In de Wulf restaurant, close to the border with Northern France.

In this unlikely spot legendary chef Kobe Desramualts, with Alisdair as his right hand man, had created a very special place. Just before it closed in 2016 influential website Opinionated About Dining named it third best restaurant in Europe after L’Arpège in Paris and the Basque Country’s Azurmendi.

Norland may seem an equally unlikely spot but over three years it has developed a similar ‘forage and ferment, cure and preserve’ ethos, utilising their own two acre organic kitchen garden and the surrounding moorlands, which yield mushrooms and wild herbs aplenty.

The garden has evolved spectacularly and the other centrepiece of the Moorcock, the expansive outdoor barbecue is used to increasing effect for cooking with fire or smoking. Lots of chefs – Tomas Parry at Brat notably – have bragging rights here but few do it as well as Alistair and his small team.

The chef’s talents don’t stop here. The various lockdowns gave Alistair the opportunity to hone his talent for ceramics, making glazes with the ash from the burnt charcoal. Now he’s not just providing for the restaurant. From ramen bowls to platters and jugs these have pride of place in an upstairs shop (open during pub hours) that offers gift packs of foodie goodies and, naturally, classic Belgian beers.

Lauded in the early days by national critics such as the Observer’s Jay Rayner and  Marina O’Loughlin of the Sunday Times, the Moorcock became a hot ticket. Twisting the metaphor hot tickets get cooler as as fickle critical attention shifts to newer ventures.

The extra pressure of Covid must have been immense. Potter’s kiln aside, Alasdair and Aimee tackled it with a defiant playfulness. I recall their take on a Chinese menu, featuring th likes of their in-house XO sauce and the kind of wild Yorkshire greens you don’t usually find in a black bean stir-fry.

Ever resourceful, the Moorcock turned into a community grocer during lockdown

More straightforwardly they diversified into quality foodie groceries – from Yorkshire asparagus to mixed bags of Cornish sea vegetables to over-wintered jars of their own produce. I recall with fondness Aimee’s rather lovely house Negroni made from a ‘Campari’ she crafted from rosehip, hogweed and clementine, mixed with rose petal wine and Yorkshire gin. It all helped to keep them afloat.

Crucially they kept their core staff together. Sustainable, ethical, pleasurable. What’s not to fall in love with all over again?
